Abstract:
This paper reviews the basic principle and merits of ultrasonic processing technology,describes the status and faced opportunity applying ultrasonic technique to cutting cakes and other foods,analyzes the research space and development potential,investigates a typical case where the ultrasonic processing technology is used to cut cake,and then according to experiments,analyzes the effects of adding ultrasonic processing or not on surface roughness,chip shape and surface temperature and so on.Based on the experimental results with food industry background,the special equipment which includes two kinds of principle projects is designed.This specialized equipment is beneficial to improving the quality of foods products,and provides a reference for the development of ultrasonic technology in food processing.
